A recipe for change  

The global food system is responsible for a substantial 30% of greenhouse gas emissions. To target this alarming statistic, Levy UK + Ireland take a leading role in championing sustainable food practices. The team prioritise menus that feature locally sourced, plant-based, seasonally inspired offerings—an initiative called the 'recipe for change’.

Levy UK + Ireland work with selected partners and suppliers to reduce emissions and food waste across their supply chain. With their help, Levy UK + Ireland can continually create eco-friendly dishes for conferences and celebrations at Swansea.com Stadium.

As standard, all our member venues embed our key sustainability priorities as part of our Climate Promise.

We believe in using fresh, seasonal ingredients.
We prioritise seasonal and British produce, and we have banned air freight.

We believe in zero waste
Whatever we’re cooking for your meeting or event our approach is root-to-stem, nose-to-tail. All our packaging is reusable and recycled.

We believe in ethical sourcing
Our fish is MCS 1-3 and all meat is sourced from the UK&I. Our teas and coffees come from responsible suppliers. Our chocolate is Fairtrade and Rainforest Alliance certified.

We believe in the power of plants
Our menus are always plant-forward, with a choice of great-tasting alternative proteins. 60% of our menus are vegan, vegetarian or plant-forward and all our desserts are plant-based. A plant-forward recipe prioritises plant ingredients (e.g. fruit, vegetables, legumes and grains) but doesn’t necessarily eliminate all animal-based foods. 

At least 50% of what would typically be an animal ingredient, will be a plant ingredient instead. For example, the 120g of chicken in a typical chicken pie, is instead 60g chicken, 60g mushrooms.

Carbon Labelled Menus
Our menus display carbon footprint information to highlight how our eating habits impact the climate and to help everyone make informed food choices. Partnering with Foodsteps, we use their leading database to scientifically measure the carbon footprint of each dish, considering ingredients, origin, and production methods. Their A-E rating system identifies low to high carbon dishes, with 'A' being the most planet-friendly.
